This wonderful paste will taste even better than the version you will find at Nandos!

Piri Piri chicken is a traditional Portuguese dish that’s usually grilled or roasted. The sauce contains African Birds Eye chillies that are grown all over North Africa and Southern Portugal. Traditionally this food takes time to prepare and cook so Condihemps version has been adapted to fit in with busy lives.

The key to the success of the dish is the time you allow your chicken to marinade, the longer the better!

This spicy, salty & sweet sauce will have anybody asking for more and the amount in the jar is enough to marinade a whole chicken, jackfruit (if you prefer a vegan meal) or 4 chicken pieces.

Where possible marinade your chicken/jackfruit overnight or throughout the day & simply roast when ready.

Ingredients

  • 1 x Jar Condihemps Piri Piri paste VE
  • 1 x whole chicken (or 4-6 chicken pieces)
  • 2 x tablespoons of olive oil
  • 1 x lemon squeezed
  • Fresh chilis (to garnish)

Method

  1. Add the jar of Condihemps Piri Piri paste to the oil, lemon juice and mix well.
  2. Add the chicken and rub well to marinade.
  3. Place the marinated chicken into the fridge to marinade overnight where possible, alternatively for as long as you can before cooking.
  4. Place the marinated chicken into a baking tray and cover with foil, ensuring the air cannot escape (this ensures the chicken stays juicy) and roast in the oven for 45 mins or for the time stipulated on the packaging if using a whole chicken. If you prefer crispier skin then remove the foil 15 mins before taking the chicken out of the oven.

If serving with potatoes, add these to the roasting tray during cooking so the potatoes soak up the marinated chicken oils and spices.

Serve with potatoes and salad or if you want to really enjoy a ‘fakeaway’ serve with chips and coleslaw.
